Organic pea hummus to serve as a starter. It is a perfect use for our organic frozen peas from last spring.
In our from-field-to table eatery, Dal Campo al Tavolo, at Suzie’s Yard, we serve our organic pea hummus as a starter. Every year we plant peas. Part nostalgia, because it reminds me of my English childhood (garden peas love the English climate). But mostly because we have to think about it as the last summer sun is setting. It’s October, and getting a piece of land ready to plant peas is a hail to the following spring. The peas are always the first fresh raw vegetable we pop into our mouths after the long winter … and each year we can’t resist the idea. The reality is that whilst the first peas are like children’s candy, after that we have so many all at once we have to freeze them. And that’s where the pea hummus comes in:
Vegan, Vegetarian Starter Recipe.
Serve as a starter, on a good bread, with grissini (Italian bread sticks) or crackers. For a gluten free variation serve with seasonal organic veggie cut in sticks or with crunchy leaves.
- 300 gr of fresh or frozen organic peas
- juice of half an organic lemon
- 1 clove of fresh organic garlic finely chopped
- 1 handful of fresh mint
- 2 tbsp tahini
- Organic EVO oil by Suzie’s Yard
- grated organic lemon rind
Boil the peas until tender. Cool in cold water. Blend peas, tahini, lemon, mint and garlic. Add the oil a little at a time, to taste. Salt to taste. Decorate with lemon rind. Remove from fridge a bit before serving to fully appreciate the taste.
