Suzie’s Yard produces SENATORE CAPPELLI triticum durum (durum wheat). We use our stone-ground Senatore Cappelli wholemeal durum flour to bake our homemade bread.
The Senatore Cappelli durum wheat is an ancestor of the current durum wheat, not contaminated by mutagenesis. Because of its height and its root system built, this wheat stifles weeds and thus its cultivation does not require use of herbicides therefore it is naturally suitable for organic farming.
Ideal for making bread and pasta; highly nutritious, tasty and easy to digest because of the low gluten content.
